Gelato is synonymous with Italy. It is the Italian word for ‘frozen’. Here are some things you may not know about gelato:

Gelato contains less butterfat (4% to about 10%) than ice cream (11% to 20%+). Gelato is creamier, smoother, and silkier than ice cream.

Richer in texture, gelato incorporates less air than ice cream while churning, which is how gelato achieves its creamy texture with less fat than traditional American-style ice cream (ice cream can double in volume because of air).
